Bacon and Egg Loaf

This week kicks off the start of a new semester and a busier schedule for me.  That said, I'm sharing a great (modified) quick bread recipe from the Crème de Colorado Cookbook.  Slices of this are perfect to freeze individually for breakfast on the go.  Pull a slice out of the freezer, pop it in the microwave for 1 minute, and you have a hot bacon and egg breakfast on the run.

Bacon and Egg Loaf

6 eggs
3/4 c. milk
1 1/2 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
6 slices bacon, cooked crisp and crumbled
1/2 c. diced orange pepper, sauteed
1/2 c. diced onion, sauteed
1 c. shredded Monterey Jack cheese
1 c. shredded Swiss cheese
1 c. shredded sharp Cheddar cheese


Beat eggs until foamy; add milk, flour, baking powder and salt, stirring until well blended.  Add bacon peppers, onions, and cheeses.  Mix well.  Bake in greased and floured 9x5 inch loaf pan at 350 °F for 55-60 minutes or until a wooded toothpick inserted in the center comes out clean.

  1. Ok, we've been trying to come up with a good breakfast option for my husband. His mornings are insane, so it has to be something easy to eat on the go. Also healthy but filling (because he has a very physical job and a very high metabolism, grr.) He doesn't like bars, granola or muffins. Bagels are mostly empty calories, cereal/oatmeal takes too long... he doesn't have easy access to a microwave so breakfast burritos don't really work. But this bread is PERFECT!!! It fits every criterion and tastes amazing to boot. Thank you so much for the idea!!! Good luck with the new busy schedule. Will be praying that things get better and you have time to spend baking - or whatever else makes you happy. :)

  2. Wow! I'm so excited that this was a great discovery for you! The original recipe did not call for onions/peppers and, in addition to the bacon, called for a cup of diced ham -- yum! Might work well if you want to beef it up (or should I say, ham it up?) for the hubby. Thanks for reading! : )
